Shrimp & Grits

For the Grits
Ingredients:
1)   1 cup Water
2)   1 cup Milk
3)   ½ cup instant Grits
4)   4 oz. Mascarpone Cheese
5)   1 oz. Cheddar Cheese
6)   1 oz. Romano Cheese
7)   1 tsp. Salt

Preparation:
1)   Boil the water and milk, and then add the instant grits.
2)   Whisk for about 5 minutes.
3)   Take the grits off the heat and whisk in the mascarpone, cheddar, Romano
       cheeses and salt.
4)   Remember, always season to taste.
5)   Put aside to make your choice of shrimp to be placed on top of the grits.

For Chipotle Honey Glazed Shrimp
Ingredients:
1)   1 tbs. Chipotle
2)   1 tbs. Honey
3)   3-4 large Shrimp
4)   3-4 slices of Bacon

Preparation:
1)   Mix honey and chipotle together and set aside.
2)   Wrap shrimp in bacon.
3)   Sauté shrimp wrapped bacon in a shallow pan, and add honey chipotle mix.
4)   Cook no more than 5 minutes until the shrimp is a nice pink, along with nicely
       browned bacon.
5)   Place on top of cheesy grits.

Alternately...for Walnut-Basil Sweet Thai Chili Glazed Shrimp
Ingredients:
1)   1 tbs. sweet Thai Chili Sauce
2)   1 tsp. Walnut
3)   1 tsp. Basil

Preparation:
1)   Mix the sweet Thai chili sauce, walnuts, and basil and set aside.
2)   Wrap shrimp in bacon.
3_   Sauté shrimp wrapped bacon in a shallow pan, and add the sweet Thai chili mix.
4)   Cook no more than 5 minutes until the shrimp is a nice pink, along with nicely
       browned bacon.
5)   Place on top of cheesy grits.


Summer Watermelon &
Heirloom Tomato Salad

Ingredients:
1)   2 Heirloom Tomatoes
2)   1 cup Watermelon Pieces
3)   2 tbs. crumbled Feta
4)   6-8 thin slices Red Onion
5)   2 large Mint Leaves
6)   2 Basil Leaves
7)   Baby Mâché
8)   1 tbs. Greek Yogurt
9)   Olive Oil
10) Sea Salt

Preparation:
1)   Cut tomatoes into quarters depending on size or into small chunks if tomatoes
       are larger.
2)   Cut watermelon into 1/4" pieces.
3)   Sprinkle mâché over bottom of bowl.
4)   Arrange tomatoes and watermelon in bowl as you want.
5)   Sprinkle onions throughout salad.
6)   Crumble feta over all ingredients.
7)   Tear basil and mint over entire salad.
8)   Drizzle with olive oil and sea salt to taste.
9)   Place 4-5 dots of yogurt all over salad.
10) Serve and enjoy!


Fire & Smoke Pizza

Ingredients:
1)   Large Dough Ball*
2)   2 tbs. Roasted Garlic Puree
3)   2 tbs. Chipotle Puree
4)   4 oz. Pizza Sauce of choice
5)   ¼ Spanish Onion, sliced
6)   11 Pieces of Smoked Gouda
7)   8 Roasted Red Peppers
8)   Fresh Basil to taste
9)   Oregano to taste
10) Extra Virgin Olive Oil

*Hint: Ready-made pizza dough found at your local grocery store can
be used as an alternative and works great!

Preparation:
1)   Add the garlic and the chipotle to the center of the dough, spread evenly over
       entire pizza with a spatula.
2)   Add the pizza sauce and spread evenly over entire pizza.
3)   Using the bottom of the ladle, spread out the ingredients in a circular manner.
4)   Tear the onions in half and distribute evenly over the pizza.
5)   Add 9 slices gouda around the edge and 2 in the center of the pizza.
6)   Add the 8 peppers in a star formation, one per slice.
7)   Shake oregano over the pizza and cook at 475 degrees for 7-10 minutes, until
       the dough is crisp and golden.
8)   When done cooking, top with the fresh basil and extra virgin olive oil.


Copa & Arugula Pizza

Ingredients:
1)   Large Dough Ball*
2)   4 oz. Pesto
3)   2 Yellow Scoops Ricotta
4)   11 slices Mozzarella
5)   11 slices Copa
6)   4 cups Baby Arugula
7)   Dried Oregano to taste

*Hint: Ready-made pizza dough found at your local grocery store can
be used as an alternative and works great!

Preparation:
1)   Add pesto and ricotta and spread to within a 1/4" of the edge of dough.
2)   Place mozzarella evenly around pizza.
3)   Place Copa evenly around pizza.
4)   Place the tomatoes evenly around pizza.
5)   Sprinkle entire pizza with oregano and bake at 475 degrees for 7-10 minutes,
       until the dough is crisp and golden.
6)   When done cooking place arugala in center of pizza.
