 Arugula Salad topped with Tomato,
Avocado, and Jumbo Lump Crab Tian

The Fresh Arugula Salad
Ingredients:
1)   A small bunch of Arugula
2)   Sliced Tomatoes

Preparation:
1)   Put the arugula on the bottom of the plate.
2)   Place sliced tomatoes on top.

1st Layer - The Tomato
Ingredients:
1)   Fresh chopped Tomatoes
2)   Fresh Basil
3)   Extra Virgin Olive Oil
4)   Salt
5)   Oregano

Preparation:
1)   Mix the above ingredients together
2)   Put them on the arugula and the sliced tomatoes.
3)   This constitutes the first layer.

2nd Layer - The Avocado
Ingredients:
1)   Fresh diced Avocado
2)   Lemon Juice
3)   Salt
4)   Fresh chopped Cilantro

Preparation:
1)   Mix the above ingredients together.
2)   Put them on top of the lst layer.

3rd Layer - The Lump Crab Meat
Ingredients:
1)   Fresh jumbo Lump Crab Meat
2)   Mayonnaise
3)   Chopped fresh Chives
4)   Lemon Juice

Preparation:
1)   Mix the above ingredients together.
2)   Put the ingredients in a mold on top of the 2nd layer.
3)   Chives can be put on top for decor.


Homemade Angel Hair (Capellini Michelle) al Pomodoro
with Basil, fresh Goat Cheese and Almonds





The Pasta
Ingredients:
1)   Fresh homemade Angel Hair
2)   Two cups of White Flour
3)   Two Eggs
4)   A small amount of water

Preparation:
1)   Mix eggs into the flour and add water to make a dough.
2)   Refrigerate the dough for a couple of hours.
3)   Roll out the dough.
3)   Dust the dough with flour.
4)   Put the dough into a pasta machine as many times as needed to make it very
       thin.
5)   Change the pasta machine settings to make thin pasta.
6)   Cook in salted water until done.

The Pomodoro Sauce (Fresh Tomato Sauces)
Ingredients:
1)   Fresh basil
2)   Oregano
3)   Crushed Tomato
4)   Extra Virgin Olive Oil
5)   Salt
6)   Goat cheese
7)   Basil leaf
8)   Thin sliced toasted Almonds

Preparation:
1)   Put the first five ingredients in a sauce pan and cook for five minutes.
2)   Add the homemade pasta to the sauce.
3)   Put the goat cheese and toasted almonds on top.
4)   Add a basil leaf.
