Oyster Stew
(Select Oysters and rich cream
make this very special!)

Ingredients:
1)   7 Oysters and Juice
2)   3/4 cup Cream
3)   1 tbs. Butter
4)   1 tbs. Sherry
5)   Pinch of Salt & Pepper
6)   Pinch of Old Bay
7)   1/2 tsp. Worcestershire

Preparation:
1)   Place ingredients in sauté pan and simmer 2 minutes.
2)   Finish with butter.


Turkey Pot Pie
(House roasted turkey slowly baked with vegetables,
gravy and a flaky puff pastry top)

Ingredients:
1)   2 tbs. Corn
2)   2 tbs. Lima Beans
3)   2 tbs. Pea Pods
4)   2 tbs. Celery
5)   2 tbs. Onions
6)   5 oz. Roasted Cubed Turkey
7)   4 oz. Turkey Gravy
8)   Puff Pastry

Preparation:
1)   Saute vegetables in butter.
2)   Place in baking dish.
3)   Place turkey on top.
4)   Coat with gravy and make “well” in middle.
5)   Cover with pastry rounds.
6)   Egg wash surface, seal edges and cut slits in top for steam.
7)   Bake at 350 to golden brown.


Shad and Shad Roe

Ingredients:
1)   4 oz. each Shad and Roe
2)   Flour
3)   Clarified Butter
4)   Lemon Juice
5)   2 slices of Apple Wood Bacon
6)   Toast Points
7)   Lemon Garnish
Preparation:
1)   Take the shad and roe and dredge in the flour.  Shake off the excess.
2)   In a saute pan mix the clarified butter and the lemon juice.
3)   Then saute the fish and roe until done...approximately 5 to 6 minutes.
4)   Serve the fish and roe on the toast points.
5)   Cook the apple wood bacon until crisp.
6)   Place the bacon on top of the roe.
7)   Add the lemon garnish.


Hot Spiced Cider

Ingredients:
1)   1 quart Clear Apple Cider
2)   1 Cinnamon Stick
3)   1 tsp. Nutmeg
4)   1 tsp. Clove
5)   1 slice Orange Slice
6)   1 ˝ oz. per portion Captain Morgan’s Spiced Rum

Preparation:
1)   Mix the first four ingredients and heat slowly.
2)   Add the rum last with additional cinnamon stick and orange slice.


Stoli Raspberry Lemonade with
Raspberry Ice Cubes
Ingredients:
1)   4 oz. Fresh Lemonade
2)   2 oz. Stoli Raspberry Vodka
3)   1/2 oz. Chambord
4)   6 Frozen Raspberries
5)   1 slice Ice
6)   1/2 Lemon slice

Preparation:
1)   Put some ice in the glass.
2)   Add the berries on top.
3)   Than add more ice.
4)   Then add the lemonade and then the vodka.
5)   Lastly add the chambord.
6)   Garnish with the lemon slice.

1
