Bros. Bistro Salad
(Serves 8)

Ingredients:
1)   20 oz. Mind Bageling Greens
       a) Chopped Romaine
       b) Fresh Spring Salad Baby Mix
       c) Baby Spinach
       d) Chopped Raddichio Lettuce
2)   3 oz. Candied Walnuts
       a) Walnut Pieces
       b) Powdered Sugar,
       c) Olive Oil,
       d) Dash of Salt and Pepper
3)   5 oz. Crumbled Gorgonzola Cheese
4)   Raspberry Vinaigrette for Dressing

Preparation:
1)   Mix greens in a bowl.
2)   Coat Walnut Pieces with Powdered Sugar and pour
       Olive oil on top of walnuts. Bake in the oven at 350 deg.
       until golden brown.
3)   Put walnuts and cheese over mixed greens and add
      Raspberry Vinaigrette dressing


Asian Chicken Salad
(Serves 8)









Ingredients:
1)   20 oz. Mind Bageling Greens
2)   10 oz. Previously Hydrated Rice Noodles
3)   10 oz. Asian Vegetables
       a) Green Cabbage
       b) Red Cabbage
       c) Shredded Carrots
4)   15 oz. Previously Roasted Chicken cooled
       and pulled from Bone Breast
5)   Asian Sesame Vinaigrette for Dressing
       (EBB exclusive)
       a) Corn Syrup
       b) Soy Sauce
       c)  Rice Vinegar
       d) Brown Sugar
       e)  Sherry Wine
       f)  Orange Juice
       g) Onion
       h) Ginger
       i)  Olive Oil
       j)  Sesame Seed Oil
       k) Sesame Seeds
       l)  Garlic
       m)Salt
       n) Cilantro
       o) Sugar
       p) Jalapeno Peppers

Preparation:
1)   Put mixed greens in a bowl.
2)   Cook noodles and let cool.
3)   Chop up vegetables in small pieces.
4)   Add Noodles, Vegtables and Chicken to
      the mixed greens and pour dressing over the salad.


Chicken Caesar Salad
(Serves 8)

Ingredients:
1)   20 oz. Mind Bageling Greens
2)   15 oz. Roasted Chicken Breast
3)   5 tbs. Shaved Asiago Cheese
4)   6 oz. Homemade Croutons
5)   Creamy Caesar for Dressing

Preparation:
1)   Put mixed greens in a bowl.
2)   Add chicken, cheese, croutons and put
      caesar dressing on top.


Wasabi Salmon Spinach Salad
(Serves 8)

Ingredients:
1)   10 oz. Salad Spinach (well washed, stems removed)
2)   12 oz. Diced Tomatoes
3)   Apple Marinade
       a) 1 cup Cold Water
       b) Juice from 1 Lemon
4)   3 Granny Smith Apples (sliced core removed and
       marinated (in the Apple Marinade) for a minimum
       of 1 hour)
5)   3 Hard Boiled Eggs (sliced)
6)   10 oz. of Smoked Peppered Salmon
7)   Wasabi Dressing

Preparation:
1)   Put Spinach in a bowl and put the apples, hard boiled
       eggs,  tomatoes and salmon on top.
2)   Add the Wasabi Dressing.


Chicken Chipotle Spinach Salad
(Serves 8)

Ingredients:
1)   10 oz. Salad Spinach
2)   5 tbs Diced Cheddar Cheese
3)   5 tbs Diced Monterrey Pepperjack Cheese
4)   10 oz. Corn Relish
       a) Roasted Corn
       b) Black Beans
       c) Tomatoes
       d) Onions
       e) Bell Pepper
       f) Olive Oil
       g) Salt
       h) Brown Sugar
       i)  Chili Powder
       j)  Lime Juice
5)   12 oz. Diced Tomatoes
6)   Chicken Marinade
       a) Salsa (Onion, Tomato, Green/Jalapeno Pepper, Oil,
            Lime Juice)
      b) Crushed Tomatoes
       c) Crushed Ancho Peppers
       d) Green Chilies
       e) Water
       f) Jalapeno Peppers
       g) Salt and Pepper
7)   15 oz Marinated Chicken (marinated in the chicken
       marinade for 8 hours minimum)
8)   BBQ Chipotle Dressing (EBB exclusive)

Preparation:
1)   Put greens in a bowl.
2)   Add cheese, corn relish, tomatoes and marinated
       chicken.
3)   Put dressing on top.
