Lemon Bars

Ingredients for the Crust:
1)  1 cup flour
2)  1/4 teaspoon baking powder
3)  1/4 teaspoon baking soda
4)  1/4 teaspoon salt
5)  1/2 cup sugar
6)  1 tablespoon butter, softened
7)  1 tablespoon canola oil
8)  1 large egg white
9)  1 teasppon lemon zest

Ingredients for the Filling:
1)  3/4 cup sugar
2)  2 teaspoons lemon zest
3)  1/2 cup lemon juice
4)  2 large egg whites
5)  4 tablespoons flour
6)  1/4 teaspoon baking powder
7)  10x sugar for decoration when cool

Procedure:
1)  Preheat oven to 350 degrees.
2)  Combine flour, baking powder and soda and salt.
3)  In small bowl combine remaining crust ingredients
      and beat well.
4)  Add to dry ingredients and combine.
5)  Pat crust mixture into a 7 by 11 or 8 by 12 inch pan
      that has been sprayed with non-stick coating.
6)  Bakes 15 to 20 minutes.
7)  Combine filling ingredients and pour over hot crust
      and return to oven for 15 to 20 minutes or until set.
8)  Cool and dust with confectioners sugar.
9)  Cut into bars. Makes 18 squares.


Cranberry Sconer

Ingredients:
1)  2 Tablespoons butter
2)  1 1/4 cups rolled oats
3)  3/4 cup whole wheat pastry flour
4)  3/4 cup all purpose flour
5)  1/4 cup sugar
6)  1 Tablespoon baking powder
7)  1/2 teaspoon baking soda
8)  1/2 teaspoon salt
9)  1/2 cup dried Cranberries (or other dried fruit)
10) 1 large egg
11) 1/2 cup mon-fat plain yogurt
12) 2 Tablespoons vegetable oil

Procedure:
1)  Preheat oven to 425.
2)  Combine dry ingredients in a bowl.
3)  In another bowl combine wet ingredients.
4)  Combine wet and dry ingredients until combined.
5)  Pat into an 8-inch circle ontop of a baking sheet
      lined with parchment paper that has been sprayed
      with non-stick spray.
6)  Sprinkle with 1 tablespoon sugar and bake for
      12 minutes.
7)  Serves 8.
