Madeleine Cookies
Ingredients:
For the lemon cookies...
1) 2 1/4 cup cake flour
2) 1 1/2 cup sugar
3) zest of 3 lemons
4) juice of 3 lemons (3 oz.)
5) 12 oz. butter cooled
6) 1/2 cup egg yolks
7) 1 cup egg whites

For the chocolate...
1) 1 3/4 cup cake flour
2) 1 1/2 cup sugar
3) 1/3 cup cocoa powder
4) 2 teaspoons vanilla
5) 12 oz. butter cooled
6) 1/2 cup egg yolks
7) 1 cup egg whites

Preparation (for the lemon cookies):
(Similar preparation for the chocolate cookies)
1)  Preheat oven to 350 degrees
2)  Melt the butter, being careful not to burn
3)  Zest the lemons and extract the juice
4)  Mix the zest with the dry ingredients
5)  Whip the egg whites to stiff peaks
6)  Mix together the juice, butter and yolks and
      add them to the dry ingredients
7)  Fold in the egg whites
8)  Pipe the mixture into the madeleine molds
9)  Bake for 15 minutes
10) Cool and dust with powdered sugar


Shortcake
Ingredients:
1) 1 lb 6 oz flour
2) 1 teaspoon salt
3) 3 tablespoons baking powder
4) 4 oz cold butter
5) 3 1/4 cup heavy cream
6) egg wash
7) sugar

Preparation:
1) Preheat oven to 400 degrees
2) Mix the dry ingredients with the butter thoroughly - until
     it looks like sand
3) Add the cream and mix only until it is incorporated
4) Roll the dough to 3/4 of an inch
5) Cut out with a cookie cutter circles and place on the greased
     cookie pan
6) Coat with egg wash and then granulated sugar
7) Bake for 10 minutes at 400 degrees
8) Cool and serve with whipped cream and fresh berries
