Crab and Artichoke Dip
(Serves 4)

Ingredients:
1)   1/2 cup Onions, diced small
2)   2 tbs. Butter
3)   5 oz. Artichoke hearts, chopped
4)   8 oz. Crab, backfin
5)   12 oz. Cream cheese
6)   1 1/2 oz. Heavy cream
7)   dash Worchestershire
8)   1 tsp. Horseradish
9)   Salt and pepper to taste

Preparation of ingredients:
Sweat onions in butter, add artichokes, and cook on low heat for 5 minutes.  Add cream cheese a little at a time, cook until soft.  Thin with heavy cream as needed.  Remove from heat, gently fold in crabmeat and remaining ingredients.  Serve over sliced baguettes.


Thai Style Seafood Hot Pot
One Serving

Ingredients:
1)   1 tsp. olive oil
2)   1/4 tsp. garlic, minced
3)   1/4 tsp. cayenne pepper
4)   2 cups stock consomme
5)   1/2 cup tomatoes, 2 inch diced
6)   1/2 cup red onion, sliced
7)   1/2 cup pineapple chunks
8)   1/2 cup celery, diced
9)   1 cup napa cabbage, sliced
10) 1/2 cup carrots, sliced
11) 1/4 tsp. red pepper flakes
12) 1/4 tsp. each salt and pepper
13) 3/4 tsp. sugar
14) Handful of bean sprouts
15) Seafood
      a) 1 1/2 oz. salmon
      b) 1 1/2 oz. calamari
      c) 1 1/2 oz. scallops
      d) 1 oz. rockshrimp

Preparation:
1) In a soup bowl, sizzle but don't brown
     the garlic in olive oil.
2) Add cayenne, stock consomme, seafood,
     tomato, red onion, pineapple, celery, cabbage,
     carrots, red pepper flakes, and sugar.
3) Let boil several minutes until carrots are
     barely tender.
4) Season with salt and pepper.
5) Put sprouts in bottom of large soup/pasta
     bowl and pour soup over them.


Apple-Strawberry Crisp

Filling:
1) 2 granny smith apples, sliced
2) 2 red delicious apples, sliced
3) 3 cups fresh strawberries
4) 3/4 cup sugar
5) 1/2 cup tapioca
6) dash nutmeg
7) dash cinnamon
8) dash cloves
9) 1 1/2 tsp. lemon juice

Topping:
1) 1 1/2 cup brown sugar
2) 1 cup flour
3) 8 oz. walnuts, chopped
4) 8 oz. butter, cold and cut into cubes

Preparation:
1) Mix topping ingredients until combined but
     still crumbling.
2) Mix filling ingredients and lay flat in a 9 x 11
     baking dish.
3) Cover with topping and bake 20-25 minutes
     in a 350 degree oven.
