Hemp Tabbouleh

1)   2 cups fresh flat-leaf parsley, chopped
2)   1/4 cups fresh mint, chopped
3)   2 stalks kale, remove stem & chopped
4)   1 large tomato, small dice
5)   1/4 onion, fine dice
6)   1/2 cucumber, small dice
7)   1 lemon, fresh squeezed
8)   2 1/2 tbs. olive oil
9)   4 tbs. hemp seeds
10) 2 tbs. pomegranate seeds
11) salt to taste

1)   Toss the chopped parsley, mint, and kale together in a large bowl.
2)   Add the tomato, onion, and cucumber.
3)   Pour in the lemon juice and olive oil and mix well. 
4)   Add the hemp and pomegranate seeds and season with salt.
5)   Blend gently.
6)   Serve as desired.

Wild Caught Seared Salmon
with Herb & Walnut Pesto & Veggie Noodles

Pesto Recipe

1)   1 cup Herbs (basil, nettles, tarragon, chickweed, parsley)
2)   3 cloves Garlic (minced)
3)   1/2 cup Walnuts (finely chopped)
4)   1/4 cup Olive Oil
5)   Salt & Pepper to taste


1)   Finely chop all the herbs together.
2)   add in your minced garlic.
3)   Mix in your walnuts, salt and pepper.
4)   Fold in your olive oil and blend until just combined.
5)   Cover and set aside.

Seared Salmon
1)   Two 6 oz. Salmon Filets (deboned, with or without skin on...your choice)
2)   2 tbs. Ghee
3)   Salt & Pepper to taste
4)   1 Rosemary sprig
5)   1 clove Garlic (whole)


1)   Heat saute pan on high heat.
2)   Pat dry salmon filets with paper towel. 
3)   Season liberally with salt and pepper.
4)   Turn back temperature to medium high and add 1 tablespoon ghee.
5)   Add the salmon presentation side down.  Let sear (brown) for 5 minutes.
6)   With a fish spatula, turn the salmon over.
7)   Add your second tablespoon of ghee, rosemary and garlic.
8)   Begin to baste the salmon with a spoon while holding the pan at a slight
9)   Baste for 3 to 4 minutes, depending on how you like your salmon cooked.
10) Remove the salmon from your pan and let rest for 3 to 5 minutes.
11) Plate with pesto and any accompaniments and serve.
