Mojo Criollo Pig

The Pig

1)   One whole pig (50 lbs.) 

The Mojo Rub


1)   1 Cup Sour Orange
2)   1 Tablespoon Oregano
3)   1 Tablespoon Bay Leaves
4)   1 Teaspoon Cumin
5)   1 Garlic Bulb
6)   4 Teaspoons Salt
7)   4 oz. Water
8)   4 oz. Pineapple Juice


1)   Gather all the ingredients.
2)   Mix all the mojo rub ingredients and let them sit for 1 hour.
3)   Strain the ingredients and save the liquids.
4)   Rub the solids in the inside of the rib cage of the
5)   Inject the liquids into the meat using a syringe.
6)   Inject 5 to 6 into each hind leg and 4 to 5 in each
       from shoulder.
7)   Whenever possible, this should be done the night
       before cooking.

Grilled Corn on the Cobb
with Chipotle Butter
(Enough for 12 ears of Corn)

1)   1 ear Corn
2)   Chipotle Butter (see recipe below)

1)   Place a pot of water on the stove.
2)   Bring to a boil.
3)   Place corn in the pot of boiling water and cook for 3 minutes.
4)   Remove corn from the water and place on the grill.
5)   Brush corn with chipotle butter. (Turn every minute to prevent burning)
6)   When half way done brush one more time with chipotle butter.
8)   Place corn on appropriate plateware.

The Chipotle Butter

(Enough for 12 ears of Corn)
  1 Cup Butter
2)   3 Tablespoon Chipotle Peppers
3)   4 Teaspoon Lime Juice
4)   Teaspoon Salt

1)   Mix the ingredients together.

Green Leaf Citrus Salad
with Citrus Vinaigrette Dressing
(Makes 1 1/2 Cups)

The Mixed Sweet Greens
1)   1 Quart Arcadian Harvest Greens
2)   Cup toasted Walnuts
3)   1 orange – peeled and sectioned
4)   cup slivered Red Onion
5)   2 tbs. Feta Cheese

The Dressing

1)   Cup Olive Oil
2)   Cup Vegetable Oil
3)   2/3 Cup Orange Juice
4)   Cup White Sugar
5)   2 Tablespoons Balsamic Vinegar
6)   2 Teaspoons Dijon Mustard
7)   Teaspoon Ground Black Pepper
8)   Teaspoon Dried Oregano or Teaspoon fresh Oregano

1)   Gather all the ingredients.
   Toss the lettuce mix with walnuts, orange sections and onion. Top with feta.
In a separate bowl, place all dressing ingredients except the oil. Now whisk
       the oil in slowly until fully mixed.
Serve the dressing on the side.
