Cranberry Orange Relish

Ingredients:
(Yield 2 Pints)
1)   1 lbs. fresh Cranberries
2)   1/2 cup granulated Sugar
3)   1 cup Water
4)   2 peeled, deseeded chopped Oranges

Preparation:
1)   Gather all the ingredients.
2)   Bring the water to a boil and then add the sugar and allow
       it to dissolve.
3)   Add cranberries and reduce the heat to a simmer.
4)   Add oranges and cook for a half of hour.
5)   Allow the relish to cool.



Southern Green Beans

Ingredients:
(Yield 1 Gallon)
1)   1 tbs. Butter
2)   1 Sliced yellow Onion
3)   1 tbs. Salt
4)   1 tsp. Pepper
5)   3 cooked Chicken Wings
6)   3 cups Chicken Broth
7)   1 Gallon fresh sniped Green Beans

Preparation:
1)   Gather all the ingredients.
2)   Saute the onions in the butter for 4 minutes.
3)   Add the salt, pepper, chicken wings and chicken broth
4)   Add the green beans, cover, reduce to medium and cook
       until green beans are tender, about 15 minutes.
5)   Remove the wings before serving.



Candied Yams

Ingredients:
1)   6 lbs. Sweet Potatoes
2)   1/2 cup Butter
3)   1 1/4 cup granulated Sugar
4)   1/2 cup Brown Sugar
5)   1 tsp. Cinnamon
6)   1 tsp. Nutmeg
7)   1 pinch Salt
8)   1 tbs. Vanilla

Preparation:
1)   Gather all the ingredients.
2)   Wash and then peel the sweet potatoes
3)   Slice the potatoes into 1/2 inch slices and then quarter the big slices
       and halve the small slices.
4)   Melt the butter.
5)   In a 2 inch deep full hotel pan thoroughly mix the butter and sweet
       potatoes.
6)   Place the remaining ingredients in a bowl and mix.
7)   Add these ingredients to the potatoes and mix thoroughly.
8)   Cover with aluminum foil and bake at 350 degrees for 35 to 40 minutes.
       Do not overcook.




Smoked Turkey

Ingredients:
1)   One Whole turkey
2)   1 to 2 tbs. Salt
3)   2 tbs. Black Pepper

Preparation:
1)   Rub salt and black pepper on the inside and outside of turkey 1 day prior
       to cooking.
2)   Place turkey in the smoker and cook 3-4 hours (depending on size), until
       internal temperature reaches 165 degrees.
