Chicken Fried Rice

1)   3 cups of cooked White Rice
2)   4 oz. Chicken
3)   cup of chopped Onion
4)   1 cup frozen Peas and Carrots
5)   3 tbs. Cooking Oil
6)   1 tbs. Soy Sauce
7)   Salt
8)   Sesame Oil

1)   Cut chicken into small pieces (1/2 inch)
2)   Heat the oil over high heat.
3)   Add onion, chicken and stir until the chicken turns to
       a white color.
4)   Add the soy sauce, peas and carrots, stir and cook
       for 1 minute.
5)   Add rice and mix well with all other ingredients.
6)   Salt to taste.
7)   Add a few drops of sesame oil.

Chinese Style Cucumber Salad

1)   2 mini Cucumbers
2)     cup Cilantro 
3)   cup Red Pepper
4)     cup Tofu Noodles
5)   2 tbs. Soy Sauce
6)   1 tbs. Chinese style dark Vinegar
7)   A few drops of Sesame Oil

1)   Cut cucumber to julienne strips.
2)   Cut cilantro to inch size.
3)   Cut red pepper to thin julienne strips.
4)   Mix the soy sauce with the Chinese dark vinegar and the sesame
       oil in a container to make a simple dressing.
5)   In a bowl add all ingredients except the dressing.
6)   Mix well and add dressing to your taste.
