 Burton Cast Iron Gluten-Free S'more

The Graham Cracker Crust
Ingredients:

1)   4 cups free Graham Cracker 
2)   4 oz. melted unsalted Butter

Preparation:
1)   Mix butter and graham cracker until combined (should look like wet sand).

 The Brownie
Ingredients:

1)   1/2 cup white Sugar 
2)   1/2 lb. unsalted Butter 
4)   12 oz. semisweet Chocolate Chips 
5)   6 Eggs 
6)   1 tbs. Vanilla Extract 
7)   2 tbs. Cocoa Powder 
8)   4 tbs. Cornstarch 
9)   1/2 teaspoon Salt

Preparation:
1)   In a medium saucepan, combine the sugar and butter.
2)   Cook over medium heat until simmering.
3)   Remove from heat and stir in chocolate chips and vanilla extract until
       melted and smooth.
4)   Whisk in the eggs one at a time.
5)   Sift in the cocoa powder and cornstarch and stir until fully incorporated.

The Topping
Ingredient:

1)   9 cups Mini Marshmallows

The Final Assembly
1)   In cast iron place cup of the graham cracker mix in the bottom. 
2)   Bake at 300 degrees for 5 minutes.
3)   Place cup of brownie mix in pan. 
4)   Bake in 350-degree oven for 20 minutes. 
5)   Let cool to room temperature.
6)   Top with marshmallow and toast in 450-degree oven for 3 minutes or
       until browned then serve.

 


Roasted Crab & Red Quiona Stuffed Avocados

The Avocados
Ingredients:
1)   4 Avocados
2)   2 tbs. Old Bay Seasoning
3)   1 tbs. Canola Oil

Preparation:
1)   Cut avocados in half and remove pit.
2)   Season avocados with old bay seasoning.
3)   Heat saute pan with the canola oil to medium-high heat and sear avocados
       for 3 minutes or until lightly browned.
4)   Remove avocados from pan and set aside.


The Filling

Ingredients:
1)   1 lb. picked and cleaned Crab Meat
2)   cup Mayonnaise
3)   1 tbs. Lemon Juice + zest of 1 Lemon
4)   2 tbs. Panko Crumbs
5)   1 tbs. chopped Scallions
6)   1 tbs. chopped Parsley
7)   1 cup cooked Quinoa (2 cups Water & 1 cup Quinoa, cook like Rice)
8)   2 tbs. Salt
9)   1 tsp. White Pepper


Preparation:
1)   Gently mix in a bowl all the ingredients for the filling.
2)   Cover and refrigerate.

The Sauce

Ingredients:
1)   Mayonnaise
2)   Sour Cream
3)   1 tsp. prepared Horseradish
4)   1 tsp. Lemon Juice


Preparation:
1)   Whisk sauce together by hand.

The  Final Assembly
1)   Take each half of avocado and fill each with 2 ounces ball of crab filling.
2)   Set avocados on metal pan and roast in 350 degree pre-heated oven for
       12 minutes.
3)   On plate drizzle decoratively horseradish crema on plate. 
2)   Place 2 avocados on top of drizzle.
3)   Top each avocado with 1 tablespoon of horseradish crema and garnish
       with scallion curls





Watermelon, Kale & Grilled Steak Salad


The Marinated Steak
Ingredients:
1)   6 oz. flat iron Steak
2)   2 tbs. Adobo Sauce

Preparation:
1)   Marinate flat iron steak overnight with adobo sauce.
2)   Place flat iron on grill and cook to desired temperature.

The Vinaigrette
Ingredients:
1)   1 tsp. Dijon Mustard
2)   1 tbs. Honey
3)   1 tsp. minced Garlic
4)   1 tbs. minced Shallots
5)   2 tbs. small diced Red Bell Peppers
6)   2 tbs. chopped Cilantro
7)   2 tbs. chopped Parsley
8)   cup Apple Cider Vinegar
9)   1 cup Olive Oil
10) 1 tbs. Salt


Preparation:
1)   Place everything in metal bowl, except oil.
2)   Slowly drizzle oil into bowl while whisking continually.


The Salad
Ingredients:
1)   cup large diced Watermelon
2)   cup shredded Kales
3)   2 tbs. chopped Cucumbers
4)   8 halved Grape Tomatoes
5)   2 tbs. pickled Red Onions (1 cup sliced Red Onions, 1 cup
       Red Vinegar, 1 tbs. Sugar...marinated overnight)
6)   1 tbs. crumbled Feta Cheese


Preparation:

1)   Place all of the salad ingredients, except feta cheese into mixing bowl
       and gently toss with 2 tablespoons of the above vinaigrette.
2)   Top with crumble feta and then with thinly sliced steak.

Optional

Ingredients:
1)   Cup Spiral Cut Raw Beets (soaked in Water)

Preparation:

1)   Place spiral beets on top of salad for garnish
