Miguel Martinez - Chef
Papas Con Choizo

Ingredients:
1) 40 grams or 1 oz. Chorizo
2) 30 grams or I oz. Crema
3) 75 grams or 2 1/2 oz. Cured Cactus
4) 50 grams or 2 oz. cured Onion
5) 230 grams or 8 oz. Confit Potatoes
6) 20 grams or 1 tbs. Cojita Cheese
7) 3 Roasted Garlic
8) 5 milliliters or 1 tsp. Extra Virgin Olive Oil
Preparation:
1) In a sauté pan, sear the potato and the chorizo.
2) In the appropriate plate, add crema.
3) Place chorizo and potatoes on top of crema.
4) Top with cactus and Onion salad.
5) Finish with warm garlic and cotija cheese.
6) Drizzle with olive oil.
Shrimp Tamal
Ingredients:
1) 4 Shrimp al Mojo
2) 75 grams or 2 1/2 oz. Corn
3) 1 Sweet Corn Tamal
4) Micro Cilantro
5) 15 grams or 1/2 oz. Dehydrated Mole
6) 20 grams or 1/2 oz. Cotija Cheese
Preparation:
1) Crumble half of the warm tamal on the appropriate plate.
2) Top tamal with corn.
3) Warm the shrimp and place on tamal.
4) Garnish with the dry mole, cilantro and cotija cheese.
5) Serve
