Coffee-Chipotle Dusted Pork Loin


Ingredients:
1)   1 Large Pork Loin
2)   Pork Brine (see recipe below)
3)   Coffee-Chipotle Spice Rub (see recipe below)

Preparation:
1)   Strain the Pork Brine over the pork loin and let it sit for 4 hours.
2)  
Rub the spice rub on the pork loin and sear to a golden brown color.
3)   Finish roasting in the oven to the desired doneness.
4)   The rub works well with Beef tenderloin also.


The Pork Brine Recipe

Ingredients:
(Yield 1 Gallon)
1)   3 Quarts Water
2)   2 Quarts Apple Juice
3)   ¾ cup Kosher Salt
4)   ¾ lbs Light Brown Sugar
5)   1 Chipotle Pepper
6)   1 Bay Leaves
7)   1 bulb Garlic Split
8)   1 Cinnamon
9)   ½ tbs. Cloves - whole
10) 1 tbs. Caraway Seeds - toasted
11) 1 tbs. Mustard Seeds
12) 1 tbs. Cumin Seeds - toasted
13) 1 tbs. Black Peppercorns
14) 1 tbs. Red Pepper Flakes
15) 1 tbs. Juniper Berries - cracked

Preparation:
1)   Combine all the ingredients and simmer slowly for 20 minutes.
2)   Cool the liquid with seasonings and let the brine sit for 24 hours.

The Coffee-Chipotle Spice Rub Recipe
Ingredients:
1)   ½ cup Chipotle Chili Powder
2)   ½ cup Finely Ground Espresso
3)   1 tbs. Sweet Paprika
4)   2 tbs. Brown Sugar
5)   1 tbs. Colemans Dry Mustard powder
6)   1 tbs. Salt
7)   ½ tbs. Cracked Black Pepper
8)   1 tbs. Dry Oregano
9)   1 tbs. Ground Coriander
10) ½ tbs. Ground Ginger
11) 1 tsp. Chile de Arbol or Cayenne (optional )
12) 1 tbs. Granulated Garlic
13) ½ tsp. Onion Powder


Preparation:
1)   Combine all and store covered in a cool dry place.
2)   Rub on the pork loin and sear to a golden brown color.
3)   Finish roasting in the oven to the desired doneness.
4)   The rub works well with Beef tenderloin also.



Garam Masala Spiced Lamb Racks
(Stuffed with Spiced Sauteed Spinach, Corn & Mushroom)


Ingredients:
1)   1 Lamb Rack
2)   Garam Masala Spice Rub (see recipe below)
3)   Spiced Sauteed Spinach, Corn and Mushroom (see recipe below)

Preparation:
1)   Rub the Garam Masala Spice Rub on the lamb.
2)   Curl 2 racks and tie to form a crown.
3)   Roast in the oven to a desired doneness.
4)   Place the spinach, corn and mushroom mixture into the center of the lamb.

The Garam Masala Spice Rub Recipe
Ingredients:

1)   3 Star Anise
2)   1 tbs. Black peppercorns
3)   1 inch stick Cinnamon
4)   1 tbs. Cloves
5)   10 Green Cardamom
6)   4 tbs. Coriander Seeds
7)   3 tbs. Cumin Seeds
8)   1 Dry Bayleaf
9)   2 Mace

Preparation:
1)   Lightly roast the whole spices in a pan.
2)   Allow it to cool down and grind to a fine powder.
3)   Use it for a spice rub on lamb or as a spice for various Indian dishes.


The Spiced Sauteed Spinach, Corn & Mushrooms Recipe

Ingredients:

1)   1 lb. Baby Spinach
2)   ½ cup Frozen Corn Kernels
3)   1 cup Assorted Varieties of Mushrooms Cut
4)   1 tsp. Cumin Seeds
5)   1 Whole Red Chili
6)   3 Whole Garlic Thin Sliced
7)   1 tsp. Garam Masala Powder
8)   1 tsp. Coriander Powder
9)   1 tsp. Cumin Powder
10) Salt to taste
11) 2 tbs. Canola Oil

Preparation:
1)   Blanch the spinach in boiling salted water and shock in iced water, squeeze the
       excess water and reserve.
2)   Cook the mushrooms in hot oil until golden brown, season with salt and garam masala
       powder.
3)   Starting with cold oil, add the sliced garlic and slowly cook till translucent.
4)   Add the cumin seeds and whole red chili and continue to cook until the garlic turns
       golden brown in color and you can smell the aroma of the cumin seeds with the garlic.
5)   Add the blanched spinach and sauté; next add the mushrooms and corn.
6)   Season with salt, coriander powder, cumin powder and garam masala powder.




Warm Marbled Potato Salad


Ingredients:
1)   1 lb. Marbled baby potato cut in half
2)   3oz. Neuskies Smoked Bacon
3)   ½ Spanish Onion or Shallots - Julienne
4)   Olive Oil are required
5)   ½ Red/ Green or Yellow Pepper - julienne
6)   1 tbs. Sherry Vineger
7)   ½ tbs. Scallions - cut on a bias
8)   1 tbs. Coarse Grain Mustard
9)   1 tbs. Cornichons
10) 1 tsp. Capers
11) 1 tsp. chopped Parsely
12)  Salt and Pepper to taste


Preparation:
1)   Cut the potatoes in half, season with salt, pepper & oil and roast in a 350
       degree oven until its cooked.
2)   Render Neuskies smoked bacon until golden brown and add shallots/Spanish Onion
       and sauté.  Then next add in the peppers and sweat until the peppers are cooked.
3)   Drain the extra oil and add the roasted potato.
4)   Add the vinegar, mustard, cornichons and capers and mix.
5)   Season and serve warm garnished with scallions.
