1)   1 can (15.5oz) Garbanzo Beans
2)   3 tbs. ahini (crushed Sesame Seeds)
3)   Lemon juice from 1/2 Lemon
4)   1/2 tsp. Ground Cumin
5)   Salt to taste

1)   In a food processor puree all ingredients until smooth and creamy.
2)   Serve with pita bread or as a dip with vegetables.

  Stuffed Chicken Breast
with Spinach and Mozzarella Cheese
and Served with Couscous and Roasted Asparagus

The Chicken Breast...Spinach & Mozzarella Cheese Recipe
1)   Four 6 oz. boneless Chicken Breast
2)   3 cups fresh Spinach (chopped)
3)   1/2 small Onion (diced and cooked)
4)   1 1/2 cups Shredded Mozzarella Cheese
5)   2 cloves Garlic (minced)
6)   Salt & Black Pepper to taste
7)   4 bamboo skewers

1)   Preheat oven at 400 degrees.
2)   Slit the chicken breast on the side to make a pocket. Season with salt and pepper.
3)   Mix spinach, onion, cheese, and garlic and season w salt and pepper.
4)   Stuff the chicken w/ spinach mixture.
5)   Secure the opening w/ a bamboo skewer.
6)   Bake for 15 to 20 minutes until the juices are running clear (165 Degrees).

The Couscous Recipe
(Serves 4)
1)   1 cup Couscous
2)   1 12 cups of Chicken or Beef Broth


1)   Boil the broth.
2)   Remove from heat.
3)   Add the couscous. Cover. Let it stand for 5 minutes.
4)   Fluff w/ a fork and serve.

The Roasted Asparagus Recipe
(Serves 4)
1)   20 to 24 spears Green Asparagus
2)   1 tbs. Olive Oil
3)   Salt & Pepper to taste
4)   2 tsp. Garlic Powder


1)   Drizzle the asparagus with olive oil.
2)   Season with salt, pepper, and garlic powder.
3)   Roast in the oven under the broiler for 5 minutes.

(A Middle Eastern Dessert)
1)   1 package Shredded Fillo Dough (available at Middle Eastern grocery stores)
2)   2 sticks Unsalted Butter (Melted)
3)   1 1/2 lbs. Fresh Mozzarella Cheese (Shredded)
4)   15 oz. Ricotta Cheese
5)   1 1/2 cups Simple Syrup (see recipe below)
6)   Orange Food Coloring (optional)
7)   Chopped Pistachios for garnish (optional)

1)   If using food coloring, add it to melted butter.
2)   Add melted butter to the shredded fillo dough and mix well.
3)   Mix two cheeses together and spread on a sheet pan.
4)   Top with buttered fillo dough.
5)   Bake at 400 degrees for 15 minutes or until the cheese is bubbling around edges.
6)   While still hot, pour the simple syrup. Then garnish with chopped pistachios.
7)   Serve warm.

The Simple Syrup (1 1/2 cups)
1)   1 cup Water
2(   1 cup granulated Sugar
3)   4 Drops Rose Water (optional)


1)   Combine water and sugar in a saucepan over medium-high heat.
2)   Bring the mixture to a boil and stir until the sugar has dissolved in to the water.
3)   Cool before using.
