 Lamb and Vegetable Stew

1)   8 pieces of Lamb Shanks or ½ pound of Lamb Chunks
       (Lamb can
be substituted for other meats, poultry, fish and ground meats)
2)   4-6 Potatoes (cut into quarters)
3)   6 Carrots (cut into chunks)
4)   1 Sweet Potato
5)   1 medium size Onion (chopped)
6)   a handful of Parsley (chopped)
7)   1 tablespoon Tomato Paste
8)   5 cups of Water
9)   Salt and Pepper to taste
10) ¼ cup Canola Oil

1)   Using a Dutch oven or a large pot, sauté the onions and the lamb with canola oil, stirring
       often to avoid burning the onions. 
2)   Add tomato paste. 
3)   Wash, peel and cut the carrots and potatoes.  Add them to the pot.  Keep stirring. 
4)   Then add parsley, salt and pepper.  Add the water. 
5)   Cover the pot with the lid. Cook in medium heat for about 40 minutes.  
6)   Serve hot in a bowl with hot bread. 
7)   Sprinkle with more parsley as garnish.

Optional:  Serve over rice.  Put a dollop of yogurt for garnish.

Tomato Salad with Walnuts
& Pomegranate Molasses

1)   6-8 large Tomatoes (ripe and bright red)
2)   2 long Peppers (any kind is fine)
3)   1 large chopped Red Onion
4)   1 cup chopped Walnuts (2 cups is fine too if you like extra Walnuts)
5)   2 tablespoons chopped Parsley
6)   Salt and Pepper to taste
7)   ¼ cup Olive Oil
8)   2 tablespoons Pomegranate Molasses
Pomegranate molasses can be found at Turkish Grocery stores, Ethnic Grocery stores,
       Whole Foods and Harris Teeter.

9)   ¼ cup Lemon Juice
1)   Cut up all the vegetables in small pieces.
2)   Place in a decorative salad bowl. 
3)   Dress the salad with olive oil, lemon juice and pomegranate molasses. 
4)   Garnish with walnuts and parsley. 
5)   Serve cold.
Optional:  Add chopped lettuce and green onions (as shown in the photo).

Chocolate Pudding Parfait with Pears
1)   2 cups Milk
2)   1/3 cup Sugar
3)   1 ½ cups semi-sweet Chocolate
4)   1 ½ tablespoon Corn Starch
5)   1 tablespoon Butter
6)   1 or 2 sliced Pears
7)   Slices of Cake or Brownie (it can be one day old)
       Crumbled cookies, lady fingers, left over pancake will also work

8)   ¼ cup Frangelica (Hazelnut Liquor)
9)   Shredded Chocolate for garnish

1)   In a sauce pan whisk milk, sugar and corn starch on medium heat. 
2)   When the mixture becomes hot, add the chocolate. 
3)   Continue stirring until it boils. 
4)   Remove from heat, add butter and mix. 
5)   Cover with plastic wrap to avoid skin from forming.
6)   Slice pears. 
7)   Wet cake or brownie pieces with hazelnut liquor. 
8)   Using a decorative glass, first place the cake pieces, then pears, top with pudding. 
9)   Repeat steps until the top. 
10) Garnish with shredded chocolate. 
11) Serve cold.
