Braised Short Ribs in Steamed Buns

The Steamed Buns
Ingredients:
1)   1½ cup All Purpose Flour
2)   ½ oz. wet fresh Yeast
3)   1 tbs. Sugar
4)   ½ cup hot Water
5)   ½ tbs. Crisco Shortening
6)   ¾ tsp.  Baking Powder
7)   0.01 oz. Salt


Preparation:
1)   Mix ½ cup flour & yeast & water and let ferment.
2)   Then add the remaining 1 cup flour and knead...add water if it's too dry.
3)   Let rest for 15 minutes, then portion 1 ounce dough and roll into a ball.
4)   Flatten with hand and roll with a rolling pin to about 4” long and 2” wide.
5)   Let rise to double the volume, then put them into the steam basket and stem
       for 12-15 minutes.


The Sort Ribs
Ingredients:
1)   2-3 lb. boneless Short Rib (fat trimmed)
2)   1½ cup low sodium Soy
3)   1½ cup Mirin
4)   2 tbs. granulated Sugar
5)   ½ tsp. crushed Red Pepper
6)   3 heads of Garlic (sliced)
7)   2 stems Green Onion (cut ½ “)
8)   All purpose Flour for dusting the Short Ribs
9)   ¼ cup Vegetable Oil
10) Salt & Pepper


Preparaton:

1)   Season the short rib with salt & pepper, dust it with all purpose flour.
2)   Heat a sauté pan on medium heat, add vegetable oil and sear and brown
       the beef.
3)   Set the beef in a medium height pan or a Dutch oven, add all the ingredients
       to the pan and cover with aluminum foil.
4)   Braise the beef in the oven at 375 degree F for about 2 hours.
5)   Insert a bamboo skewer to check for tenderness, bake it a little more if more
       tenderness is required.


Assembling the Tiger Bites

 Ingredients:
1)   The Steamed Buns
2)   The Short Ribs
 
3)   Sliced Cucumber
4)   Sliced Jalapeno (optional)
5)   Cilantro
6)   Crushed peanuts


Preparation:
1)   Slioce the short rib to about
¼ “ thick. 
2)   Then flip the steam bun open, insert a sliced cucumber.
3)   Top with short rib, cilantro, jalapeno and crushed peanuts.
4)   Meanwhile, reduce the braising liquid till thicken and use as a dipping sauce.



Prince Edward Island Mussels

Ingredients:
1)   20 piece Prince Edward Island Mussels
2)   ¼ cup diced Red & Green Peppers
3)   ¼ cup diced white Onion
4)   1 tbs. chopped Garlic
5)   ½ tbs. chopped Ginger
6)   ¼ cup chopped Scallion
7)   5 slices of Jalapeno
8)   2 sprigs Cilantro
9)   ½ cup White Wine
10) 1 tbs. light Soy
11) 2 tbs. Oyster Sauce
12) 2 tbs. Hoisin Sauce
13) 1 tbs. Sesame Oil
14) 1 tbs. Canola Oil


Preparation:
1)   Heat a sauté pan on high heat, add canola oil.
2)   When smoking hot, add jalapen, garlic, ginger, onion, peppers.
3)   Sauté until fragrant, then add mussels and toss in the heat.
4)   Then deglaze with white wine, then add soy, oyster sauce, hoisin sauce
       and steep until all the mussels are open.
5)   Serve in a deep serving bowl and top with scallion & cilantro.
