Ingredients:
1) 20 piece Prince Edward Island Mussels
2) ¼ cup diced Red & Green Peppers
3) ¼ cup diced white Onion
4) 1 tbs. chopped Garlic
5) ½ tbs. chopped Ginger
6) ¼ cup chopped Scallion
7) 5 slices of Jalapeno
8) 2 sprigs Cilantro
9) ½ cup White Wine
10) 1 tbs. light Soy
11) 2 tbs. Oyster Sauce
12) 2 tbs. Hoisin Sauce
13) 1 tbs. Sesame Oil
14) 1 tbs. Canola Oil
Preparation:
1) Heat a sauté pan on high heat, add canola oil.
2) When
smoking hot, add jalapen, garlic, ginger, onion, peppers.
3) Sauté until fragrant,
then add mussels and toss in the heat.
4) Then deglaze with white wine, then add
soy, oyster sauce, hoisin sauce
and steep until all the mussels are open.
5) Serve
in a deep serving bowl and top with scallion & cilantro.
