Mac and Cheese
.
Standard Version (left) and "Your Way" with ingredients of choice (right)

Ingredients: 
1)   1 tbs. Whole Butter
2)   3 oz. Chicken Stock
3)   2 cups Heavy Cream Reduction
4)   2 1/2  cups Ziti (cooked)
5)   1/2 cup Shredded Cheddar
6)   1/2 cups Shredded Mozzarella Provolone Blend
7)   1/4 cup Romano Parmesan Blend
8)   Salt and Pepper to taste
9)   Topping (see recipe below)


Preparations:
 

1)   Cook the ziti.  Then strain and reserve.

2)   In a medium saute pan, melt the butter to golden brown.
3)   Add chicken stock and reduce by 2/3.
4)   Add heavy cream reduction and reduce by half (or when bubbles get big and rich.  Stir to prevent burning.
5)   Add cooked ziti and toss.
6)   Once ziti is heated through, add all three cheeses and toss vigorously until completely combined (a touch
      of stock may be used to thin mixture if cheese is too binding).
7)   Adjust flavor with salt and pepper.
8)   Place mixture in a oven/broiler safc dish.
9)   Sprinkle topping and broil until golden brown and delicious.
10) Enjoy!!!

The Topping
Ingredients: 
1)   1/2 cup Bread Crumbs
2)   1/4 melted Butter
3)   1/4 cup Romano Parmesan Blend
4)   Salt and Pepper to taste

Preparation: 
1)   Dry and cube old bread (day old baguette works best)
2)   Let dry or bake for 10 to 12 minutes on low temperature until crispy.
3)   Once dry and/or cool, run through a robo coupe or food processor until medium-fine course grade.
4)   In a bowl, incorporate bread crumbs, melted butter and dry cheese.
5)   Adjust flavor with salt and pepper.
6)   Set aside.
