Flan al Estilo de Mama Marisa

The Flan...
1)   2 cups Heavy Cream
2)   2 cups Half and Half
3)   4 Eggs
4)   1/2 cup Sugar
5)   1 tbs. Vanilla

1)   Beat eggs and sugar.
2)   Add the half and half plus the cream and vanilla.
3)   Bake in caramelized molds in a water bath at 300 degrees.  Bake for
       one hour.

The Orange Sauce...
1)   2 cups Orange Juice
2)   1 tbs. Water
3)   1 tbs. Sugar

1)   Reduce the orange juice by half.
2)   Add the water and the sugar.
3)   Bring to a boil again.
4)   Set aside and let cool.

1)   Place the flan in the bowl.
2)   Add the sauce.
3)   Then add the orange segments around.

Sopa de Sandia

The Watermellon Soup...
1)   2 cups Watermelon Juice
2)   Soasonal fruit

The Lemon Gelee...
1)   1 1/2 cups Lemon Juice
2)   1 cup Water
3)   1 tbs. Sugar
4)   1/2 gram Gelatin Sheets (1/2 sheet)

1)   Bring water, cinnamon stick, and sugar to boil.
2)   Add gelatin and set off heat.
3)   Allow infusing for 20 minutes.
4)   Strain and cool.

The Garnish...
1)   Strawberries
2)   Raspberries
3)   Blueberries
4)   Blackberries
5)   Baby Mint Leaves

1)   Serve the berries in a soup plate with the gelatin cut in cubes.
       Add the mint around.
2)   Serve on the table and pour the watermelon soup over the berries.
       If you want...garnish with a ball of sorbet.  Lemon and raspberry
       sorbet works good.
