Basic Lemon-Vanilla
Quick Bread Recipe
Ingredients:
1) 3 cups all-purpose flour
2) 1 Tablespoon baking powder
3) 1 Teaspoon nutmeg
4) 1 1/4 Teaspoon salt
5) 8 Tablespoons butter, softened
6) 1 cup sugar
7) 2 eggs
8) 1 1/2 cups milk
9) 2 Teaspoons vanilla extract
10) 2 Teaspoons grated lemon zest
For the Citrus Bread
In the Basic Recipe: substitute 1 Tablespoon mixed
grated or
chopped citrus zest for the 1 Teaspoon grated lemon
zest.
For the Cranberry Bread
In the Basic Recipe: reduce milk from 1 1/2 cups to
1/2 cup...
add 2 cups fresh cranberries or cranberry sauce.
Jam-filled Peanut-Butter
Orange Muffins
Ingredients:
1) 2 cups all-purpose flour
2) 1/2 cup sugar
3) 2 Teaspoons baking powder
4) 1/2 Teaspoon baking soda
5) 1/2 Teaspoon salt
6) 1 cup peanut butter
7) 1 egg, slightly beaten
8) 2 cups buttermilk
9) 2 Tablespoons grated orange rind
10) 4 Tablespoons butter, melted
11) 3/4 cup grape or other jam
