Sweet Potato Cupcakes

Ingredients:
(Yield 12 cupcakes)
1)   1 ½ cup Cake Flour
2)   1 tsp. Baking Powder
3)   ¼ tsp Baking Soda
4)   ¼ tsp. Salt
5)   ¼ tsp. Allspice
6)   1 tsp. Cinnamon
7)   ¾ cup Sugar
8)   1 Egg
9)   1/3 cup Buttermilk
10) 6 tbs. Unsalted Butter
11) 6 oz. Mashed Sweet Potato
12) 2 tsp. Vanilla


Preparation:
1)   In a medium size bowl mix all dry ingredients and set aside.
2)   In a large bowl cream the butter and sugar for 5 minutes.
3)   Add the buttermilk, egg, sweet potato and vanilla until well blended.
4)   Add the dry ingredients with the wet ingredients and mix just enough to
       incorporate all ingredients.
5)   Line a 12 count cupcake pan with liners then using an ice cream scoop,
       scoop and equal portion into the liners.
6)   Bake for 22 minutes.
7)   Let cool for 5 minutes in the pan then remove to remain cooling.


The Brown Butter Cream Cheese Frosting

Ingredients:
1)   2 pack of Cream Cheese
2)   1 stick Unsalted Butter
3)   1 tsp. Cinnamon
4)   2 tsp. Vanilla
5)   3 cups Powdered Sugar

Preparation:
1)   Brown the butter in a pan for about 5 minutes or until brown but not burned.
2)   In a stand mixer, mix the cream cheese then slowly add cooled butter.
3)   Mix for 2-3 minutes.
4)   Add cinnamon, powdered sugar and vanilla and mix for an additional 4 minutes.
5)   Frost your cupcakes!


The Cinnamon Buttercream Icing
Ingredients:
1)   2 sticks Unsalted Butter (softened)
2)   4 cups Powdered Sugar
3)   1 tbs. Cinnamon
4)   2 tsp. Vanilla

Preparation:
1)   Cream the butter for 2 minutes then add the remainder of the ingredients.
2)   Mix for 10 minutes.
3)   Frost your cupcakes.
