Yellow Cupcakes with Buttercream Frosting

Ingredients:
(Makes 12 large or 24 regular size cupcakes)
1)   1/4 cups sifted Flour
2)   1 tsp. Baking Powder
3)   1/2 tsp. Baking Soda
4)   1 tsp. Salt
5)   1/2 stick Unsalted Butter at room temperature
6)   2 cups Sugar
7)   5 large Eggs at room temperature
8)   1 1/2 tsp. Vanilla
9)   2/3 cup Buttermilk at room temperature
10) Buttercream Frosting (see recipe below)

Preparation:
1)   Sift then whisk the dry ingredients.
2)   Cream the butter in a mixer.  Then slowly add the sugar until light and fluffy...about 4 minutes.
3)   Add the eggs one at a time until combined.
4)   Add the vanilla.
5)   Add the dry ingredients and buttermilk at 3 intervals...ending with the dry ingredients.
6)   Beat for approximately 1 minute.
7)   Bake at 350 degrees in a convection oven for approximately 20 minutes.

The Buttercream Frosting
Ingredients:
1)   Two 1/4 sticks Butter - at room temperature
2)   6 cups powdered Sugar
3)   2 tsp. Vanilla
4)   2 tbs. cold Milk
5)   8 oz. Cream Cheese- at room temperature


Preparation:
1)   Beat the butter.
2)   Add cream cheese and beat until smoooth.
3)   Add powdered sugar and vanilla.
4)   Then add the milk and beat until creamy...about 2 minutes.
