Rutabaga Sweets Chocolate Cream Pie

The Chocolate Pie Dough
1)   1/3 cup unsweetened cocoa
2)   2 2/3 cup of all-purpose flour
3)   1/2 teaspoon salt
4)   3 tablespoons sugar
5)   8 tablespoons butter (1 stick), cut into cubes
6)   1/2 cup shortening
7)   1/4 cup vodka
8)   1/4 cup cold water

1)   Place cocoa, flour, salt, and sugar in a food processor.
2)   Add butter and shortening and pulse until mixture resembles coarse crumbs.
3)   With the food processor running add the vodka and water.
4)   Remove the dough and wrap well in plastic wrap.
5)   Refrigerate at least 30 minutes.
6)   Place dough on a floured surface and roll ” thick. Cut approximately 1” larger than the pie tin.
7)   Line pie tin with dough. Cut off excess and crimp. Line pie shell with plastic and fill with baking beans.
8)   Bake at 350F 10-15 minutes.
9)   Remove baking beans and allow to cool completely.

The Chocolate Cream Filling
1)   2 cups heavy cream
2)   cup sugar
3)   4 large egg yolks
4)   4 ounces semi-sweet chocolate
5)   Pinch of salt

1)   Place chocolate in a large bowl and set aside
2)   Combine cream and sugar in a large saucepan. Bring to a boil over medium to high heat.
3)   Temper in the cream to the egg yolks by whisking one third of the hot cream into the yolks.
       Then return the entire mixture to the saucepan and reduce the heat to low.
4)   Cook while stirring constantly until the mixture coats the back of a spoon.
6)   Immediately pour over the chocolate. Add salt and allow to sit for 1 minute.
6)   Use a hand blender to combine the melted chocolate and custard mixture.
7)   Pour into baked chocolate pie shells to fill just below the rim.
8)   Refrigerate until set.
9)   Top with whipped cream. Chill until ready to serve.

The Whipped Cream
1)   2 cups heavy cream
2)   1/4 cup confectioner’s sugar
3)   1 tsp. Vanilla Extract

1)   Combine all ingredients in a large mixing bowl.
2)   Whip on medium to high speed to medium peaks.
