Another Special Out of Town Recipe

Mint Sauce
(to be served with lamb)
1)   2 cups chopped Mint
2)   1 dessertspoon of Sugar
3)   1 cup Hot Water
4)   1 cup Brown Vinegar

Preparation:
1)   Boil sugar, water, vinegar for 2 minutes.
2)   Add mint when cool.
3)   Bottle.
4)   Serve with the lamb.


Pumpkin Soup
Ingredients:
1)   4 tbs. Butter
2)   2 large Onions - chopped
3)   Just over 2 lbs. of Pumpkin - cut up
4)   Salt and Pepper
5)   1/2 tsp. Curry Powder
6)   4 cups Chicken Stock
7)   1/4 cup Cream
8)   Chopped Parsley

Preparation:
1)   Melt butter, curry and onions.
2)   Fry 2 to 3 minutes.
3)   Add the stock and pumpkin.
4)   Simmer for 35 minutes...adding salt and pepper to taste.
5)   Process to puree.
6)   Reheat.
7)   Serve with cream and chopped parsley.
