Dungeness Crab Cakes with
Thai Sweet Chili Sauce
(serves 6)

The Crab Cake
Ingredients:
1)   1/3 cup Celery - finely diced
2)   1/3 Onion - finely diced
3)   1/3 Red Bell Pepper - diced
4)   1 cup Dungeness Crab Meat - picked and well drained
5)   1 Egg
6)   1/2 cup Mayonnaise
7)   Juice from 1/2 Lemon
8)   1 tsp. Worcestershire Sauce
9)   1 tbs. chopped Chives
10) 1/4 tsp. Thyme
11) 1/2 tsp. Garlic - minced
12) 1 1/2 cups Panko or Bread Crumbs...more as needed
13) Salt and Pepper to taste

Preparation:
1)   Mix all the ingredients well and adjust seasoning to taste.
2)   Use ice cream scoop to shape into cakes.
3)   Bread with panko crumbs.
4)   Place cakes on sheet pans sprinkled with dry panko crumbs.
5)   Wrap tightly and store in the refrigerator until ready to cook.

The Sweet Chili Sauce
Ingredients:
1)   1/2 oz. fresh minced Ginger
2)   1/4 oz. Garlic - minced
3)   1/2 fl. oz. White Wine Vinegar
4)   2 fl. oz. fresh Lime Juice
5)   12 fl. oz. Sake
6)   4 fl. oz. Heavy Cream
7)   12 oz. Unsalted Butter - cold cut in chunks
8)   2 fl. oz. Thai Sweet Chili Sauce
9)   Kosher Salt and White Pepper to taste

Preparation:
1)   In a heavy saucepan over medium high heat, combine the ginger, garlic,
       vinegar, lime juice and sake.
2)   Reduce to a light syrup (90%).
3)   Add cream and reduce to 60% over medium heat, careful not to scorch.
4)   Reduce heat to low and gradually whip in the cold butter chunks.
5)   Whisk in chil sauce, salt and pepper.

The Marinated Cucumbers
Ingredients:
1)   1 Cucumber- shaved on spiral slicer or mandoline
2)   1/2 qt. Vinegar
3)   1/2 cup Sugar
4)   1/4 cup Salt
5)   1 tbs. ground Cardamom
6)   1 tbs. Allspice

Preparation:
1)   Mix all the ingredients together and bring to a boil.
2)   Chill.

The Assembly
1)   Saute crab cakes in a non-stick saute pan until golden on each side and
       heated through.
2)   Drain briefly on paper towels.
3)   Arrange crab cake on a plate.
4)   Drizzle with chili sauce.
5)   Pile high with marinated cucumbers.
6)   sprinkles with chopped chives.
7)   Garnish with chive strands.


Grand Marnier Chocolate Volcano Cake
(serves 8)

Ingredients:
1)   1 lb. butter
2)   11 oz. Bittersweet Chocolate
3)   7 oz. Sugar
4)   3 whole Eggs
5)   3 Egg Whites
6)   3 Egg Yolks
7)   Vanilla Extract to taste
8)   1/2 tsp. Salt
9)   4 oz. Flour
10) 2 oz. Cocoa Powder
11) 2 tsp. Baking Powder
12) 1 oz. Grand Marnier
13) 1 tbs. Orange Zest
14) Grand Marnier Whipped Cream (see recipe below)

Preparation:
1)   Melt together 12 ounces butter and bittersweet chocolate. Set aside.
2)   Mix remaining 4 ounces of butter and 7 ounces sugar until fluffy.  Add
       eggs and egg yolks one by one, mixing about 30 seconds between each.
       Add melted butter and chocolate (needs to be just lukewarm).  Add
       Grand Marnier and orange zest.
3)   Sift together the flour, cocoa powder, salt and baking powder.  Add the
       dry ingredients into the butter/egg mixture and mix for 3 minutes at
       high speed.
4)   Make a meringue with the egg whites and remaining 2 ounces of sugar.
       Fold into the chocolate mixture.
5)   Fill dish with 7 ounces of the mixture.
6)   Bake at 375 degrees f. for 15 to 20 minutes.  Serve warm with Grand
       Marnier Whipped Cream.

The Whipped Cream
Ingredients:
1)   1 Liter Heavy Cream
2)   3 1/2 oz. (100 grams) Sugar
3)   3 oz. Grand Marnier

Preparation:
1)   Whip heavy cream together with sugar.
2)   Add in the Grand Marnier


Apple Strudel
(serves 16)

The Filling
Ingredients:
1)   4 oz. White Bread Crumbs
2)   6 oz. melted Butter
3)   2 lbs. Granny Smith Apples - peeled cored and sliced
4)   3 oz. granulated Sugar
5)   6 oz. dark Raisins
6)   6 oz. coarsely crushed Nuts or Almonds
7)   1 tsp. ground Cinnamon
8)   1 Lemon (Lemon Zest)
9)   2 oz. Rum

Preparation:
1)   Mix all the above ingredients.

The Dough
Ingredients:
1)   1 lb. Flour
2)   1 ts. Salt
3)   3/4 cup Water
4)   1 Egg
5)   2 oz. Vegetable Oil

Preparation:
1)   Mix the flour, egg, oil and salt.
2)   Mix with the dough hook on low speed and add enough water to make soft
       dough.
3)   Knead the dough on medium speed until smooth and elastic.
4)   Make the dough into a small ball and cover with oil.
5)   Cover and sit and room temperature for about an hour.

The Assembly
1)   On a tablecloth stretch the dough until it is so thin that you are able to read
       a newspaper through it.
2)   Sprinkle with melted butter and cover with the apple mixture.
3)   Roll it and brush with butter.
4)   Bake for about 35 minutes at 350 degrees f.
