Sesame Seed Crusted Ahi Tuna Tataki

For the Wasabi Aioli
Ingredients:
1)   3 cups Mayonnaise
2)   2 oz. Wasabi Paste
3)   2 Garlic Cloves - chopped
4)   1 oz. Ginger Puree
5)   1/3 oz. Sesame Oil
6)   1 1/2 tsp. Kosher Salt
7)   1/2 tsp. ground Black Pepper

Preparation:
1)   Mix all the ingredients.
2)   Keep chilled until ready to use.

For the Ahi Tuna
Ingredients:
1)   1 (6 oz.) cube of Ahi Tuna
2)   1 oz. Sesame Oil
3)   2 oz. Black and White Sesame Seeds, 50/50 mix
4)   2 oz. Olive Oil
5)   12 fried Wonton Chips
6)   1 1/2 tsp. pickled Ginger - julienne cut
7)   Wasabi Aioli (see recipe above)
8)   Micro Greens

Preparation:
1)   Coat all sides of the tuna cube with sesame oil and roll into sesame seed
       mixture.
2)   Using a saute pan...heat the olive oil and quickly sear for 15 seconds.  Let
       rest for 8 minutes to cool and then slice 1/4-inch thick.
3)   Place wasabi aioli, tuna, pickled ginger and micro greens over the wonton
       chips and serve immediately.
