Spring is such a nice time of year.  It is a great time to cook with all the spring veggies. Look for them at your local market.

I made a short trip to South Carolina during April.  I tasted Southern Cooking and found two recipes I want to share with you (see recipes below).  One is a good old fashion sweet potato recipe...and the other is a simple southern dessert.  The Recipes are from the cookbook "Carolina Cooking".

I hope you enjoy them and find them as good as I did when visiting South Carolina.

Candied South Carolina Sweet Potatoes

Ingredients:
(Serves 6-8)
1)   6 medium baked Sweet Potatoes
2)   1/2 cup light Brown Sugar
3)   1 1/2 tsp. Cinnamon
4)   1/4 cup Margarine
5)   1 tsp. Lemon Juice
6)   1/2 cup Syrup (drained from peaches, apricots, or pineapple)

Preparation:
1)   Peel potatoes, slice lengthwise, then layer in casserole alternating with
       other ingredients.  Cover.
2)   Bake at 350 degrees f. for 30 minutes.  Then uncover and bake 10
       minutes longer.
3)   This is an excellent accompaniment with ham, pork roast, pork chops
       or any pork cut.



Magnolia Gardens Easy Peach Cobbler
Ingredients:
(Serves 6)
1)   3 cups sliced fresh Peaches
2)   1 tsp. Lemon Juice
3)   1/2 tsp. Nutmeg
4)   1/2 tsp. Cinnamon
5)   1 cup self-rising Flour
6)   1 Egg - slightly beaten
7)   1 cup Sugar
8)   1 stick Butter or Margarine - melted

Preparation:
1)   Place peaches in buttered oven-proof baking dish.
2)   Sprinkle with lemon juice, cinnamon and nutmeg.
3)   Mix flour, egg and sugar to a coarse crumb texture.
4)   Spread over peaches.
5)   Pour melted butter evenly over flour mixture.
6)   Bake uncovered at 350 degrees f. for 30 to 35 minutes.
