Frijoles Molidos with Coffee

Down to Earth Coffee Tour Chef

Ingredients:
As much as possible...use all-fresh, all-organic ingredients
1)   3 lbs. Red Beans (or the equivalent of Canned GOYA beans)
2)   2 oz. Garlic
3)   8 oz. Onions
4)   4 oz. Sweet Bell Peppers
5)   6 oz. Celery

Preparation:
The special touch of this recipe is the fact that we add ground coffee to the beans.  This adds
a touch of acidity to the flavor.
1)   Mix the ingredients together and put in a cooking pot.
1)   Then add twice as much water as the beans.  In other words, water should be twice as high.
2)   We cook on wood burning stove to add a special taste.  In the wood burning stove it takes
        90 minutes to cook the beans to the right stage of softness.
3)   Once they are soft, put them in the blender or food processor.
4)   Then you take the following ingredients and brown them on 4 tablespoons cooking oil in a
        wide frying pan, at least 30 inches.

Additional Ingredients:
1)   2 oz. Tomato Sauce
2)   3 tbs. Garlic
3)   2 tbs. Down to Earth Ground Coffee
4)   2 tbs. Sugar
5)   3/4 oz. Salt
6)   1/3 of an oz. Black Pepper.

Additional Preparation:
1)   Take the bean mixture and add them to the brown ingredients in frying pan.
2)   Let is sit at low heat for about 15 minutes, stirring occasionally.


Base Coffee Recipe
You can always prepare a cool coffee beverage by letting your coffee sit in the fridge or adding ice.
But for these recipes we recommend that you prepare the following base. It can be kept
in the refrigerator for the rest of the summer (up to 8 weeks).



Ingredients:
3 cups of Down to Earth ground coffee (you can use your favorite roast but we recommend Dark)
9 cups of water
3 cups of sugar

Preparation:
Carefully heat the 9 cups of water and take off the stove when it is about the reach the boiling point.
Add the 3 cups of sugar and the 3 cups of coffee to the hot water.
Stir every five minutes for 20 minutes
Empty the mix into a pitcher while straining. Place a coffee maker paper filter in a strainer so it does not break with the weight of the mix.
To check if the quantity of sugar in the mix suits your taste, try a mix of one teaspoon of the mix and two teaspoons of water. Rework the balance of ingredients if necessary.


Old Fashioned Coffee Soda
This refreshing drink can also work as dessert,
especially in the middle of a hot summer afternoon.



Ingredients:
¾ cup of cold coffee base
1 tablespoon of extra fine sugar
1/3 cup of sweet cocoa
1 scoop of coffee flavored ice cream
1/3 cup of cold club soda

Feel free to substitute the coffee ice cream with Vainilla or Rum & raisins if you want to enhance the flavor of the recipe.

Preparation:
Using a blender at low speed, mix the coffee base and the sweet cocoa.
Fill half of a tall glass with the mix.
Add a scoop of the ice cream
Then add the cold club soda very slowly.
Decorate with whip cream and a cherry. Can also add chocolate powder or very small pieces of a chocolate bar.

Feel free to substitute the coffee ice cream with Vainilla or Rum & raisins if you want to enhance the flavor of the recipe.


City Cooler
This drink is similar to a Milk shake
but more dense and with a stronger flavor.



Ingredients:
½ cup of cold coffee base
1 cinnamon stick
2 clove
Nutmeg
Crushed Ice
1/8 cup of Whipped Cream

Preparation:
Mix the cinnamon and the clove with the base and let it sit for 30 minutes
Then mix the crushed ice and the whipped cream.
Place the crushed ice and whipped cream in a tall glass
Slowly pour the base with the spices over the ice and let it mix


Turkish Cola Float
This drink is similar to a Black Cow.



Ingredients:
¼ cup of coffee base
1 scoop of coffee ice cream
8 ounces of your favorite Cola drink

Feel free to substitute the coffee ice cream with Vainilla or Rum & Raisins if you want to enhance the flavor of the recipe.

Preparation:
Pour the coffee base in a tall glass
Add the ice cream serving
Slowly pour the 8 ounces of Cola Drink
Place a slice of Orange on the edge of the glass


Coffee Cola



Ingredients:
½ cup of coffee base
1 cup of whipped cream
4 scoops of Coffee Ice Cream
32 ounces of your favorite cola drink
4 chilled tall glasses

Preparation:
Mix the whipped cream with the coffee base
Fill half the tall glasses with the mix of whipped cream and coffee base
Add a scoop of ice cream to each glass
Fill the rest of the tall glasses with the Cola Drink
